While dmcrypt is nice, I find ecryptfs actually nicer. It doesn't require dedicated partition/volume – it could encrypt selected directories, making migration dead simple (just move files to new dir). It very convenient when one want to encrypt only specific files, like work documents, illegal mp3 and pr0n collection ;).

It already in kernel since 2.6.19-rc1, so it's available in Feisty. But I think userspace tools (http://ecryptfs.sf.net) are not in Ubuntu (yet?).
